Before Correction

Last summer, I was into baking bagels. I prepared the dough in the morning every weekend, and fresh bagels with ham and cheese were ready at lunch time. After baking them several times, I didn’t need to open a recipe. Everything became on autopilot. All the details were in my head including the ingredients, bench time and the temperature in the oven.

After Correction

Last summer, I was really into baking bagels. Every weekend, I prepared the dough in the morning, and by lunchtime I had fresh bagels with ham and cheese ready to eat. After baking them several times, I no longer needed to look at a recipe. Everything became second nature. I had all the details memorized, including the ingredients, proofing times, and oven temperature.

-Everything was on autopilot.
-The whole process was on autopilot.
-I was doing everything on autopilot.
-By then I could do it on autopilot.

◆second nature: deeply ingrained skill/habit

◆bench time vs. proofing time
